(Otherwise known as what to do with your over abundance of vegetables from your garden)
The growing season is winding down. Your neighbors refuse your offer of any more tomatoes or zucchini. Now what? There are things you can you do to ensure your crop lasts into the winter.
* You can can your vegetables using a pressure cooker, which is absolutely necessary for safely preserving low acid veggies. Find instructions on line. Tomatoes such as plum and San MarZane are best because they are meaty and low in water content.
* Easiest by far is freezing your produce. With the exception of cabbage and potatoes, almost all other vegetables are suitable for freezing. You will want to blanch them first, by boiling for one to 3 minutes, then dunking into ice water before packing for freezing. This stops the development of enzymes, preserving color, flavor and nutrition. Pack in plastic containers or freezer bags.
* Finally, dont forget about your herbs. These can be blanched just by pouring boiling water on them briefly before packing for the freezer. You can skip this step and go right to the freezer for most herbs with the exception of basil, which will turn black in the freezer without blanching.

* Divide and transplant lily of the valley, phlox, and day lilies for more spring blooms.⁠
* Fertilize your lawn a final time with a slow-release formula.⁠
* Take cuttings of begonias and coleus, root in water (change daily), then plant in a pot and put in a bright window until you can plant outside in spring.⁠
* Remove the last flowers on your tomatoes so the plants can ripen the remaining fruit before the frost.⁠
